Greek Salad

This salad is so delicious. It is a great accompaniment for Grilled Pork Loin and is also a perfect salad to take to a potluck because it is filling and pre-dressed, so people don’t have to take time to choose a dressing while getting their food.

1 head romaine lettuce, rinsed, dried and chopped
1 red onion, thinly sliced
1 small can pitted black olives
1 green bell pepper, chopped (stage 2)
2 large tomatoes, chopped (stage 2)
1 cucumber, sliced (stage 2)
1 cup crumbled feta cheese
6 Tbsp olive oil
1 tsp dried oregano
1 lemon juiced, or 2 Tbsp lemon juice*
½ tsp garlic powder or 1-2 cloves of garlic minced
½ tsp sea salt or to taste
Pepper to taste

In a large salad bowl, combine the romaine, onion, olives, pepper, tomatoes, cucumber and cheese. Whisk together the oil, lemon juice, oregano, garlic, salt and pepper. The fresh garlic will be more potent and a little spicy (because raw garlic is spicy). Pour the dressing over the salad and toss to combine. If you need to replace stage 2 veggies with stage 1, try diced zucchini and mushrooms.

I keep a bottle of 100% lemon juice in the fridge. Minute Maid makes a good one sold in the freezer section that is just lemon juice, no preservatives. Also, Lakewood Organic does too. It’s easier and more affordable than keeping fresh lemons all the time.
